Beat the heat with this healthy mango chia pudding

– 1 ripe mango, peeled and diced – 1 cup unsweetened almond milk (or any milk of your choice) – 3 tablespoons chia seed – 1-2 tablespoons honey or maple syrup (optional, depending on your sweetness preference) – 1/2 teaspoon vanilla extract – Fresh mango slices, mint leaves, or shredded coconut for garnish (optional)


In a blender or food processor, blend the diced mango until smooth to create a mango puree. 

Prepare Mango Puree: 

In a bowl, combine the mango puree, almond milk, chia seeds, honey or maple syrup (if using), and vanilla extract. 

Mix Chia Pudding Base 

Cover the bowl and refrigerate the mixture for at least 4 hours or overnight. This allows the chia seeds to absorb the liquid and create a pudding-like consistency. 

Let it Set: 

– After the initial setting time, give the pudding a good stir to ensure that the chia seeds are evenly distributed and haven't clumped together. – Taste the pudding and adjust the sweetness if needed.

Stir and Adjust: 

Experiment with different varieties of mangoes for varying levels of sweetness and flavor. 

– If you prefer a smoother texture, you can blend the mixture before refrigerating it.

– Adjust the sweetness by adding more honey or maple syrup according to your taste.
